FOR a fresh, healthy, authentic Mexican meal, look no further than Mad Mex in Baulkham Hills.

The house of flavoured chillies and freshly made burritos and nachos is usually bustling with people during lunch hour.

The vibrancy of the Mexican culture comes to life with traditional foods ranging from tacos to quesadillas, a delicious cheese, capsicum, steak and onion melt.

Store supervisor Pam Leynes said the main ingredient in every dish includes chillies, onion, coriander and a touch of lime juice.

"Mad Mex is often chosen because it is the healthy option," she said.

Mad Mex top seller, the naked burrito is a great example of a healthy summer meal.

The naked burrito offers a choice of shredded beef, pork, steak or chicken mixed with fresh tomatoes, onions, cheese, lettuce, sour cream and guacamole as well as the option of mild, medium and hot sauce.

Store owner Sonny Khan said the ingredients at Mad Max were freshly made, cut and marinated every morning while other traditional products like the Jarritos, a sweet flavoured drink, is imported from Mexico.

To finish the meal, Mad Mex offers a serving of sweet cinnamon churros dipped in chocolate syrup to balance out the taste of onions and spices. Churros originate from Mexico and are the final touch to a full, tasteful Mexican cuisine.
